Smokin’

It’s quite enevitable that I start smokin everything. I have a large smoker at my disposal, and it can fit about 150lbs of meat. In fact we tested how much it can fit this week and without a 5th rack we had fit a bit over 150lbs of pork butt. The awesome part about this specific smoker is that it has dripping pan.

It collects both the juices and the fat which I plan on using in quite a few dishes. Its smoky and full of flavour. Ideas include confit with the fat of any meat and the juices could be used for sauces, soups, braises, etcthe posiblities are endless.
